This recipe is adapted from Kam Sokhi’s allergy-friendly Pumpkin Soup Recipe, but you can adjust it however you want! Sprinkle seeds or herbs on top, add coconut milk, or serve it alongside your favorite bread with a little honey butter. Each spoonful is a warm reminder that healthy, simple meals can still pack great flavor.

Easy, Healthy Pumpkin Soup (Inspired by Kam Sokhi)

Ingredients:

  • 1 (15oz) can pumpkin purée
  • 1 large onion, chopped
  • 4-5 cloves garlic, minced
  • 2 tbsp olive oil
  • 3–4 cups vegetable broth (enough to reach your desired consistency)
  • ½ cup coconut or other milk of your choosing
  • Spices to taste: ginger, turmeric, ground cumin, salt, and pepper

Instructions:

  1. In a pot, heat oil, and sauté onion until translucent. Add garlic and spices and cook until fragrant.
  2. Add pumpkin purée, then pour in broth. Bring to a gentle simmer and let cook for 10–15 minutes.
    Stir in coconut or other milk to make it creamy. Use an immersion blender (or carefully transfer to a regular blender) to purée until smooth.
  3. Taste and adjust seasoning. Garnish with toppings of your choice, like pumpkin seeds, fresh herbs, or other crunchy topping.
